The first step, mixing the flour with water into a dough, is considered
the most important and difficult part of making soba noodles.And it becomes
a globe.
Put a hand in the place that left for the center a little from the edge
of the noodles zone and grow it more.
The dough is then rolled into a thin square by repeatedly rolling it around
a wooden rolling stick. And at last, the dough is folded and cut into the
noodles.
"Soba" at Minshuku, "Suginoko" is made using a yam
and the white of an egg that are kneaded elaborately. |
